Winter Slaw

Delicious winter greens salad

Combine winter’s sweet apples with cabbage, carrots, and alliums for a simple and healthy slaw. 

 

Winter Slaw

Makes one small side salad for 2-4

INGREDIENTS

  • 1 tablespoon extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Sea Salt, to taste (start with 1/2 teaspoon)
  • Optional 1 T Honey or Elderberry Syrup
  • 1 medium sized Cabbage, shredded
  • 2-4 Carrots, rinsed and grated
  • 2-4 cloves garlic, minced
  • 1 leek, shallot, or small onion, halved and sliced thinly
  • 2 apples, grated or cut into small cubes

 

INSTRUCTIONS

  1. In a medium sized salad bowl, mix together vinegar, olive oil, mustard, honey, and sea salt.
  2. Add remaining ingredients to salad bowl and toss to combine.  You can massage with your hands to mix and help tenderize veggies.
  3. Serve and enjoy!

NOTES:

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
