Melon and Ginger Salad

Sweet, spice, and tang balance perfectly for this staple summer salad.

 

Melon and Ginger Salad

Makes one side salad for 2-4 people

INGREDIENTS

  • ~5 Lbs. of melon or watermelon, skin cut off and cubed (4-6 cups of cubed melon.  Watermelon, cantaloupe, or a mix of any melons works!)
  • A 1-2″ long piece of fresh ginger, skinned and minced
  • Small handful of chopped basil and/or mint.
  • OPTIONAL thinly sliced Jalapeno
  • 1 tablespoon lemon or lime juice
  • Sea Salt, to taste (start with 1/4 teaspoon)

 

INSTRUCTIONS

  1. Place cubed melon/watermelon in medium sized salad bowl.
  2. Add in remaining ingredients and gently toss.
  3. Taste, and add more salt and lemon/lime juice as needed.
  4. Serve and enjoy!

NOTES:

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
