Grilled Cauliflower

Easy and perfect for keeping out of the kitchen on hot summer days.
Grilled Cauliflower
Serves 2-4 as a side
INGREDIENTS
- 1 medium – large sized cauliflower head
- Olive oil
- salt and pepper to taste
INSTRUCTIONS
- Cut cauliflower in half, through the stem down the middle.
- Place cut side down, and cut “strips” or long florets down each half.
- Pre heat BBQ to medium-high heat.
- In a bowl (or baking dish if using), toss cauliflower with olive oil, salt, and pepper.
- Place cauliflower florets/strips either very carefully on the BBQ so that they don’t fall through, or in a BBQ grilling basket, or just in an oven proof baking dish or skillet.
- Grill until cauliflower is slightly browning. This will be quicker if placed directly on the grill, and take longer if in a baking dish.
- Serve and enjoy!
NOTES:
- This pairs great with chimichurri or pesto.
- Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!

The first time I ever heard of Chimichurri was when I was in my early 20’s and working at a restaurant. I had just moved back to Spokane after college, it was at the same time we were starting up our farm.
