Cherry Beet Popsicles

Sweet and earthy treat for hot days!  

Add in other fruit, or even nut butter, for a healthy summer dessert.  

 

Cherry Beet Popsicles

Makes about 16 oz. 

INGREDIENTS

  • 1 – 2 cups of rinsed and pitted cherries
  • 1 large or 2 medium sized red beets, rinsed and quartered (keep peel on).
  • 1 can of coconut milk, or 12 oz. of other milk of choice
  • 6 tablespoons chia seeds (optional)
  • 1/4 – 1 cup nut butter of choice (optional)

 

INSTRUCTIONS

  1. Steam/boil beets in a saucepan with enough water to cover them, with a lid, and bring to a boil.  Reduce heat to medium and simmer until beets are tender, about 15-20 minutes.  You can use an instant pot if you have one instead, or keep your beets raw if you have a high powered blender.  
  2. Once beets are tender, place beets in blender, along with remaining ingredients.  
  3. Blend until smooth.  
  4. Pour into popsicle molds, ice cube trays, or small paper cups with popsicle sticks or plastic spoons as the stick.  
  5. Freeze until solid, and enjoy! 

NOTES:

You can add additional natural sweeteners like honey if you’d like!  

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
