Beet and Carrot Salad

Shredded raw carrots and beets are sweet and slightly crunchy.  

This salad makes a great side for burgers, grilled chicken, or tacos.  

 

Beet and Carrot Salad 

Makes one small side salad for 2-4

INGREDIENTS

 

INSTRUCTIONS

  1. In a medium sized salad bowl, mix together lemon juice, olive oil, honey, spices, and sea salt.  
  2. Remove tops from beets and carrots and reserve another use.  
  3. Rinse carrots and beets, and then shred using a grater.  
  4. Add shredded carrots and beets to salad bowl and toss to combine.  
  5. Add chopped herbs and toss again.  
  6. Serve and enjoy!
