Summer Slaw

Easy slaw is perfect for warm days.
Any color cabbage, herbs, fresh roots, olive oil, and something tangy makes this super simple and delicious.
Summer Slaw
Serves 2-4 as a side
INGREDIENTS
- 1 small or ½ of a medium cabbage, shredded (sliced very thin)
- 1-4 raw roots, grated or quartered and sliced thin (radish, daikon, beet, turnip, carrot, etc.)
- 1 clove of garlic, minced (sub garlic scapes or green garlic)
- Handful of fresh herbs, chopped (parsley, cilantro, basil, green onions, etc!)
- 2 Tablespoons Olive Oil
- 2 Tablespoons Vinegar of choice or Lemon or Lime juice
- Salt and pepper to taste
- OPTIONAL ½ teaspoon honey
INSTRUCTIONS
- In a large salad bowl, combine all ingredients and mix well (I use my hands and end up massaging the cabbage slightly as I mix, which helps it break down a little).
- Serve and enjoy! You can make ahead and keep covered in the fridge for a day, too.
NOTES:
- If you have other veggies or fruit (think grated apple, grapes, chopped pear, etc.) on hand, add them in too!
- Top with crushed nuts for some crunch.
- Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
