Summer Frisee Salad

Flavorful and slightly bitter frisee mellows perfectly with sweet apples and herbs.  

Summer Frisee Salad

Makes one side salad for 2-4 people

INGREDIENTS

  • 1 head of Frisee, rough chopped into “salad” size pieces
  • 2 small apples, thinly sliced
  • 2 medium sized salad turnips or radishes, thinly sliced
  • Small handful of parsley, rough chopped
  • 1/8 cup (2 tablespoons) lemon juice or balsamic vinegar
  • 1/8 cup (2 tablespoons) extra virgin olive oil
  • 1 clove of garlic, minced
  • Sea Salt, to taste (start with 1/4 teaspoon)

 

INSTRUCTIONS

  1. Add olive oil, vinegar, garlic, and salt to large salad bowl.  Mix well with whisk or fork.
  2. Add frisee, apples, turnips/radishes, and parsley to bowl and mix until oil and vinegar is well incorporated.
  3. Serve and enjoy!

NOTES:

Feel free to substitute or add other fruit!  Berries, oranges, and dried fruit all are delicious in this recipe.  

If using fresh lemon juice, add in some lemon zest.  

If Frisee is a bit too bold for your tastes, mix the frisee with lettuce or another milder green — even pea shoots or sunflower shoots.
