Shoot and Microgreen Salad

Nutrient dense and super light salad.  

This small side salad pairs great with any dish, and can be mixed with lettuce or other greens for a larger salad.  

Shoot and Microgreen Salad

Serves 2-4 as a small side salad

INGREDIENTS

  • 1 bag of Micro Greens and/or Shoots (~¼ Lb.)
  • Salad roots (carrots, beets, radish, turnips), sliced thin
  • 1 handful of herbs, chopped (Basil, Parsley, Cilantro, etc.)
  • 1 tablespoon Lemon Juice or Vinegar of choice
  • 2 tablespoons Olive Oil 
  • 1 large pinch of Salt, to taste
  •  

INSTRUCTIONS

  1. Put Micro Greens/Shoots, chopped herbs, and veggies in a medium sized salad bowl. 

  2. Add Salt, Vinegar, and Olive Oil to salad, and again gently toss until well mixed.  You can also combine Salt, Vinegar, and Olive Oil in separate jar/bowl before adding to salad.  

  3. Gently mix/toss using hands or salad tongs.  
  4. Serve and enjoy!  

NOTES:

  • If you would like a larger salad, add more shoots/micros, Kale, Lettuce, or other greens to combine with  shoots/micros. 
  • Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
