Farm Tacos

Our not-always-traditional taco recipe is meant to be a guide–add what veggies you have on hand, use a large lettuce or brassica leaf instead of a tortilla if you want, and add in your other favorite taco toppings!

The staple of this recipe is a filling (ground beef, cauliflower, or whatever other veggies and meat you have on hand), taco seasoning, and something to put your filling in (tortillas, large lettuce leaves, cabbage leaves, or even chard leaves).  Toppings are optional but delicious — cilantro, quick pickles, kimchee, radishes, shredded carrots, microgreens, and anything else you can fit in there!

 

Farm Tacos

Serves 2-4

INGREDIENTS

  • 1 or more tortillas per person, or sub lettuce leaves, or other large veggie leaves.
  • 1 head of cauliflower.  Sub broccoli or other veggies if desired.
  • 1 Lb ground beef (optional)
  • 1 clove of garlic, minced.  Sub green garlic or garlic scapes.
  • 3 tablespoons olive oil, coconut oil, or avocado oil
  • 2-4 tablespoons taco seasoning, to taste.  See notes below to make your own!
  • Toppings!  Quick radish pickles, chopped cilantro, thin radish slices, shredded carrots, microgreens and shoots, avocado, etc!

INSTRUCTIONS

  1. Cut cauliflower into small florets.  Use the stem, it’s sweet!
  2. Heat large skillet to medium-high heat.  Add oil, cauliflower, garlic, and taco seasoning.  Stir occasionally until cauliflower is slightly browned and crispy.  See notes below on roasting instead of sautéing.
  3. If using ground beef, you can add it into the cauliflower to brown with it, or brown it in its own pan.  If using a different pan, divide the taco seasoning and garlic between the cauliflower and the ground beef.
  4. Gather your toppings while cauliflower and ground beef cook.
  5. When cauliflower and beef are done, the tacos are ready to serve!
  6. Fill tortillas or lettuce leaves with filling, and add in toppings of choice.  Enjoy!

NOTES:

Make your own Taco Seasoning: 4 parts chili powder, 2 parts ground cumin, 1 part ground paprika, 1 part fine sea salt, 1 part ground black pepper, and 1 part garlic and/or onion powder.  If you don’t have one of the spices, it’ll still taste great!  Cumin is one of the essential flavors, so hopefully you have some on hand!

To roast cauliflower instead of sautéing: preheat oven to 400 degrees F. with rack in center of oven.  Mix oil, taco seasoning, and cauliflower together in a bowl and then spread out on large baking sheet.  Roast for 30 minutes, until crispy on edges.

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
