Peach Salsa

A sweet salsa base that you can customize with peppers, garlic, and herbs.
A peach (or nectarine), tomato, and sweet and spicy peppers come together for a simple take on salsa. Great with chips or served with grilled chicken, pork, or beef.
Peach Salsa
Makes ~2 cups of Salsa
INGREDIENTS:
- 1 large or 2 small peaches or nectarines, diced (leave skins on)
- 1 medium sized slicing tomato, diced
- 1 small sweet or red onion, diced
- 1 Hot Pepper, or more depending on peppers and desired hotness, minced (seed peppers if you’re looking for a milder salsa)
- 1-2 sweet/mild peppers, diced
- 1-5 cloves of garlic, minced
- ¼ loose cup Cilantro, Mint, and/or Basil, finely chopped
- 1 tablespoon lime (or lemon) juice
- Salt and pepper to taste (start with ½ teaspoon salt and a ⅛ teaspoon pepper)
INSTRUCTIONS:
Combine and mix all ingredients in a small serving bowl or large jar.
Keep refrigerated for up to 1 week.
NOTES:
- Wear disposable gloves when chopping hot peppers to keep your hands free from hot pepper juice.
- This recipe is meant as a guide! You can omit or add any ingredients that you’d like and most likely still end up with a lovely salsa.
