Delicious winter greens salad
Combine winter’s sweet apples with cabbage, carrots, and alliums for a simple and healthy slaw.
Winter Slaw
Makes one small side salad for 2-4
INGREDIENTS
- 1 tablespoon extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 teaspoon Dijon mustard
- Sea Salt, to taste (start with 1/2 teaspoon)
- Optional 1 T Honey or Elderberry Syrup
- 1 medium sized Cabbage, shredded
- 2-4 Carrots, rinsed and grated
- 2-4 cloves garlic, minced
- 1 leek, shallot, or small onion, halved and sliced thinly
- 2 apples, grated or cut into small cubes
INSTRUCTIONS
- In a medium sized salad bowl, mix together vinegar, olive oil, mustard, honey, and sea salt.
- Add remaining ingredients to salad bowl and toss to combine. You can massage with your hands to mix and help tenderize veggies.
- Serve and enjoy!
