Napa Cabbage Stir Fry

Super quick and healthy, this is an easy recipe for lunch or a last minute dinner.
Napa cabbage takes the lead with garlic, carrot, and ginger adding lovely highlights of flavor.
Napa Cabbage Stir Fry
Serves 2-4
INGREDIENTS
- 1 medium sized Napa Cabbage
- 1-2 cloves of garlic, minced (sub garlic scapes or green garlic)
- 2 carrots, chopped as matchsticks, halved and chopped into half circle slices, or shredded.
- 1 teaspoon fresh ginger, minced (sub 1/4 teaspoon powdered ginger)
- Dash of red pepper flakes
- 2 tablespoons coconut oil, avocado oil, or sesame oil
- 2 tablespoons coconut aminos, liquid aminos, or soy sauce
- 1 tablespoon rice vinegar or apple cider vinegar
- 1/4 cups crushed/chopped nuts.
- Cilantro, chopped
INSTRUCTIONS
- Lay napa cabbage lengthwise on cutting board, cut off end, and slice cabbage into 1/2″ – 1″ wide strips.
- Heat large skillet on medium-high heat for 1 minute, and then add oil, napa cabbage slices, ginger, garlic, and red pepper flakes. Cook for 6-8 minutes.
- Add coconut aminos and vinegar and cook for 1 more minute.
- Top with crushed nuts and cilantro, serve, and enjoy!
NOTES:
Pairs great with ground pork or ground beef.
