Sweet, spice, and tang balance perfectly for this staple summer salad.
Melon and Ginger Salad
Makes one side salad for 2-4 people
INGREDIENTS
- ~5 Lbs. of melon or watermelon, skin cut off and cubed (4-6 cups of cubed melon. Watermelon, cantaloupe, or a mix of any melons works!)
- A 1-2″ long piece of fresh ginger, skinned and minced
- Small handful of chopped basil and/or mint.
- OPTIONAL thinly sliced Jalapeno
- 1 tablespoon lemon or lime juice
- Sea Salt, to taste (start with 1/4 teaspoon)
INSTRUCTIONS
- Place cubed melon/watermelon in medium sized salad bowl.
- Add in remaining ingredients and gently toss.
- Taste, and add more salt and lemon/lime juice as needed.
- Serve and enjoy!
NOTES:
Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
