Simple, traditional hummus

Great for dipping, spreading, or eating by the spoonful.

Hummus

Makes about 2 cups

INGREDIENTS

  • 1/3 cup cashew butter or tahini. See notes.
  • 1 1/2 cups cooked Garbanzo beans, drained.
  • 2 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 1+ Cloves of Garlic, minced.  Sub green garlic and garlic scapes.
  • Sea Salt, to taste
  • 1 tablespoon ground cumin.
  • 1 teaspoon ground paprika.
  • Optional rough chopped basil and/or parsley.

INSTRUCTIONS

  1. In a blender or food processor, blend cashew butter or tahini with olive oil and lemon juice until light and smooth, about 1 minute.
  2. Add in salt, garbanzo beans, spices, and herbs, and blend until smooth.
  3. If too thick, add a drizzle of water at a time until desired consistency.
  4. Serve with crackers, flat bread, chips, bread, or veggie slices!

NOTES:

To make your own cashew butter or tahini, blend/process cashews or sesame seeds until smooth.  Measure out slightly over 1/3 cup of nuts/seeds. I like to make mine in the food processor, and just make the cashew butter first, and then move on with the recipe from there!

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
