Herb Vinaigrette
A simple and flexible vinaigrette perfect for using what herbs you have for a fresh, healthy dressing.
Makes ~ 1/2
INGREDIENTS
- 1/4 cup vinegar of choice or Lemon Juice
- 1/4 cup Extra Virgin Olive Oil
- small handful of herbs of choice, finely chopped
- 1 clove of garlic (sub green garlic or garlic scapes), rough chopped
- 1/4 teaspoon salt, to taste
- 1/2 teaspoon mustard
INSTRUCTIONS

In a small jar with a lid, add all Vinaigrette ingredients and shake well, until emulsified. Alternatively, skip chopping the herbs and Garlic, and add all vinaigrette ingredients to a food processor or blender and mix.

Can keep covered in fridge for about a week.
- Use on your all of your favorite salads!
NOTES:
Lemon and Thai Basil are one of our favorite herbs for summertime salad dressings!
Add a splash of honey for a sweeter, honey mustard-like dressing.
Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
