Easy and quick alternative to salad!

Grilled Romaine

Serves 2-4 as a side

INGREDIENTS

  • 2 heads of Romaine Lettuce (sub summer crisp / crisp head lettuce)
  • Olive oil, sunflower oil, avocado oil, or other neutral oil.
  • salt and pepper to taste
  • 1 teaspoon lemon juice

INSTRUCTIONS

  1. Pre heat BBQ to medium-high heat.
  2. Cut each Romaine head in half, through the middle.
  3. Slather Romaine heads in oil and sprinkle with salt.
  4. Grill lettuce halves for 2-3 minutes on each side, removing from the grill when outside leaves are visibly cooked.
  5. Drizzle a little more olive oil and the lemon juice over lettuce heads, and more salt and pepper to taste.
  6. Serve as a side or appetizer, and enjoy!

NOTES:

  • You can serve with a side of salad dressing or pesto for dipping if you’d like!
  • Cutting with a knife and eating like a wedge salad seems to be a good method for eating.
  • Adding grated parmesan is a delicious option, too!
  • Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
