Green Goddess Dressing
Farm style green goddess dressing! This is a flexible recipe that you’ll be making all summer long.
Makes 1/2 – 1 cup
INGREDIENTS
- 1/4 cup Lemon Juice
- 1/4 cup Extra Virgin Olive Oil
- 1/4 + cup herbs of choice, rough chopped
- 1 clove of garlic (sub green garlic or garlic scapes), rough chopped
- 1/4 teaspoon salt, to taste
- 1/2 teaspoon mustard
- Optional 1/2 cup of yogurt or mayonnaise
- Optional 2 teaspoons capers or anchovies
INSTRUCTIONS
- Add all ingredients to a food processor or blender and blend until smooth. You can also use an immersion blender.
- Alternatively, leave out the capers/anchovies, and chop herbs and garlic finely. Add to a jar or container with a lid and shake/stir until emulsified.
- Taste and add more salts and herbs as needed.
- Keep covered in the fridge for up to a week.
NOTES:
We love using basil, marjoram, sage, and parsley in this dressing! Add more herbs for an even greener dressing.
Adding yogurt or mayo makes this dressing creamier, and the capers or anchovies make it have that special tang. We often leave these out, though, and still enjoy it thoroughly!
Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
