Caprese Salad

Sweetest salad of summer.
This is the perfect appetizer, snack, or side to any summer dish. No cooking required which means it’s perfect for hot summer days.
Caprese Salad
Serves 2-4 as a small side
INGREDIENTS
- .5 – 1 Lb of tomatoes (slicing, heirloom, salad, or even cherry), sliced.
- 1/2 Lb of Mozzarella cheese, sliced thin. (optional)
- Large handful of Basil leaves, chopped or torn into smaller pieces
- 1 tablespoon Olive Oil
- 1 tablespoon balsamic vinegar
- Sea Salt, to taste
INSTRUCTIONS
- On a large plate, lay out Mozzarella and tomato slices, alternating between the two.
- Sprinkle basil evenly on top.
- Drizzle olive oil, balsamic, and sea salt on top.
- Serve and enjoy!
NOTES:
- Adding a clove of finely minced garlic sprinkled on top spices this up for garlic lovers!
- This is best eaten with a fork (and maybe a knife). For a finger friendlier version, make little open faced sandwiches with mozzarella on the bottom, tomato, and basil leaves on top. Skip or reduce the balsamic and olive oil, but still sprinkle salt.
- We usually make this without cheese, and just enjoy with tomatoes and basil.
- Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
