Broccoli Stir Fry

Quick and easy stir fry.

Broccoli, garlic, and nuts make this super simple and delicious.

Broccoli Stir Fry

Serves 2-4

INGREDIENTS

  • 1-2 heads of broccoli
  • 1-2 cloves of garlic, minced (sub garlic scapes or green garlic)
  • 2 tablespoons coconut oil, avocado oil, sesame oil, or olive oil
  • 1/4 cups of nuts, whole or crushed – optional
  • 1/2 teaspoon sea salt

 

INSTRUCTIONS

  1. Chop broccoli, including tender stems.  Keep in long florets, or chop into smaller pieces.
  2. Heat large skillet on medium-high heat for 1 minute, and then add oil, broccoli, and salt. Cook for 6-8 minutes, stirring occasionally.  Cook until tender.
  3. Add in garlic and nuts, and cook for another minute or so.
  4. Serve and enjoy!

NOTES:

Add in sliced or matchstick carrots, summer squash, beets, or any other summer veggies you have on hand!

Minced or powdered ginger adds extra flavor — start with 1 teaspoon and go from there!

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
