Basil, Mint, and Apple Salad

A sweet and bright salad that welcomes spring while still holding onto those last winter apples
Fresh mint and basil blend to make a flavorful dressing, and the apple’s sweet crispness balances out the flavors.
Basil, Mint, and Apple Salad
Makes 1 side salad
INGREDIENTS
- 1 – 2 Lettuce Heads, depending on size and desired amount of salad. Sub baby leaf lettuce mix, arugula, spinach, or other greens.
- Small handful of fresh mint and basil sprigs.
- 1/2 – 1 sweet, crisp apple (like cosmic crisps).
- 1 large or 2 small salad turnips.
- 2 tablespoons Extra Virgin Olive Oil
- 2 tablespoons Vinegar of choice or Lemon Juice
- 1/4 teaspoon Sea Salt, to taste.
- 1/4 teaspoon mustard
INSTRUCTIONS
- Pull leaves off of lettuce heads and rinse. Pat dry or use salad spinner.
- Rough chop lettuce leaves until “salad” sized. Place in salad bowl.
- If using baby leaf lettuce or other baby greens, skip above steps.
- Finely chop mint and basil, including tender stems. Place chopped herbs in a small jar or container.
- Add olive oil, lemon juice or vinegar, salt, and mustard to jar/container with herbs.
- Shake with a lid on or stir until emulsified.
- Slice apples thinly and add to lettuce.
- Thinly slice salad turnips, and add to lettuce. If using a large turnip, halve or quarter before slicing.
- Dress salad before serving and toss.
- Enjoy!

Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
