Arugula and Melon Salad

Sweet summer melons pairs perfectly with flavorful arugula.

Feta cheese and herbs bring on even more flavor.

 

Arugula and Melon Salad

Makes one side salad for 2-4 people

INGREDIENTS

  • 5.5 oz. Arugula (1 bag)
  • 1 small melon, skin cut off and cubed (2-4 cups of cubed melon.  Watermelon, cantaloupe, or a mix of any melons works!)
  • 1/8 cup thinly sliced sweet onion.  
  • Small handful of chopped basil and/or mint.
  • OPTIONAL 1/4 cup feta, goat, or blue cheese, crumbled
  • 1/8 cup (2 tablespoons) lemon or lime juice 
  • 1/8 cup (2 tablespoons) extra virgin olive oil
  • Sea Salt, to taste (start with 1/4 teaspoon)

 

INSTRUCTIONS

  1. Add olive oil, lemon or lime juice, chopped herbs, and salt to large salad bowl.  Mix well with whisk or fork.
  2. Add in arugula and toss. 
  3. Add in melon cubes and optional cheese and toss gently (it’s okay if melon and cheese mostly stays on top.)
  4. Serve and enjoy!

NOTES:

Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
