Peach Vinaigrette

Peach Vinaigrette
A sweet summer vinaigrette perfect for dressing lettuce, micro greens, and any other summer greens.
Makes ~ 3/4 cup
INGREDIENTS
- 1/4 cup Lemon Juice
- 1/4 cup Extra Virgin Olive Oil
- 1/2 of a ripe peach, rough chopped
- optional small handful of herbs of choice, finely chopped
- 1 clove of garlic (sub green garlic or garlic scapes), rough chopped
- 1/4 teaspoon salt, to taste
INSTRUCTIONS
- In a pint sized jar with a lid, add all Vinaigrette ingredients and mix well with a spoon or fork, mushing peaches. Alternatively, skip chopping, and add all vinaigrette ingredients to a food processor or blender and mix.
- Can keep covered in fridge for about a week.
- Use on your all of your favorite salads!
NOTES:
Add a splash of honey for an even sweeter dressing.
Feel free to add anything else in that you’d like! This recipe is meant as a guide — substitute as needed!
