Grilled Summer Squash

Grilled summer squash is surprisingly sweet, and makes a great side or main plate.  

Grilled Summer Squash

Serves 2-4 as a side

INGREDIENTS

  • 1 medium – large sized summer squash/zucchini 
  • 1 tablespoon olive oil
  • salt and pepper to taste 
  • OPTIONAL fresh shopped herbs and garlic

 

INSTRUCTIONS

  1. Cut ends off summer squash and then cut in half, resulting in two cylinders.  Stand cylinders on end and slice ¼ inch thick rectangles from squash.  If using a patty pan squash, slice ¼ inch circles from the squash standing on its side.  The result is ¼” thick summer squash slabs.  

  2. Place squash slices in a wide bowl or pie plate and drizzle with olive oil and sprinkle salt and pepper, and herbs if using.  Mix squash and olive oil until all slices are oiled.  

  3. Grill squash slices like steaks, flat side down, on medium heat.  Cook for about 5 minutes, or until the bottom side is browned but not burnt.  Flip slices and let cook until browned.  

  4. Serve and enjoy! 

NOTES:

  • Feel free to add anything else in that you’d like!  This recipe is meant as a guide — substitute as needed!
